This is one of my favorite lemon balm recipes. The subtle lemon flavor combined with the salmon, honey, and dill makes a wonderful meal your whole family will enjoy. This is a great way to use fresh herbs from your garden!

Lemon Balm: Easy To Grow and Easy to Use

Lemon balm (melissa officinalis) is a prolific perennial herb that is easy to grow once it is established. I am always looking for different ways to use this calming herb because my lemon balm plant is so prolific and has a wonderful lemon zest flavor. Lemon balm will be a wonderful addition to your herb garden if you aren’t already growing it!

The good news is the possibilities are endless with lemon balm. Reminiscent of lemon juice, the leaves are wonderful in hot tea, fish recipes, lemon balm chicken, lemon balm butter, and lemon balm pesto. Lemon balm pairs well with fish dishes, chicken, pasta dishes, and other leafy greens in green salads.

This herb is a member of the mint family and the fresh leaves can be used in so many wonderful recipes. Lemon balm has a calming effect and is used as a medicinal herb. A handful of leaves can be used in so many different types of recipes.

One delicious way to use lemon balm is this honey dill lemon balm salmon. The lemony flavor pairs well with the dill, honey, and salmon.

It’s a great recipe for a hot day. You can cook it on the grill outside so you don’t heat up your house!

Tips for Making Honey Dill Lemon Balm Salmon

This recipe is easy and quick. It is a delicious weeknight meal that comes together in only 30 minutes. Fresh lemon balm leaves and fresh dill combined with quality salmon come together for a meal even the pickiest of eaters will love.

Skin the Salmon

For best results, I like to skin the salmon before cooking. It’s easy to do, and it makes cutting and serving the salmon easy and quick. If the salmon has extra brown colored flesh near the skin, I carefully remove it to improve the finished flavor.

Ingredients:

Salmon: The star of the show in this recipe! I’ve made this recipe with Atlantic salmon, sockeye salmon, and Chinook salmon and it has been delicious every time. Fresh caught salmon is the most delicious!

Salt: A small amount of salt in this recipe really brings out the subtle flavors, but you can skip the salt if you need to for dietary reasons.

Honey: Honey and salmon go together very well! The sweetness of the honey really adds a lot to this recipe. You could also sub in brown sugar for the honey for another sweet twist.

Fresh Lemon Balm: The lemon balm in my herb garden is so prolific I am always looking for good lemon balm recipes. This is a great way to use lemon balm. It adds a subtle fresh flavor to the salmon that is delicious. You could also use dried leaves in this recipe, but fresh is the best.

Fresh Dill: Dill is also a prolific herb in my garden, and it pairs so well with salmon. You can also use dried dill if you are making this recipe in the winter months. You can use other fresh herbs like fresh mint or fresh oregano for a subtle taste variation.

Olive oil: Use a small amount of quality olive oil to grease the aluminum foil before placing the salmon.

How to Make Honey Dill Lemon Balm Salmon

Preheat your oven to 400 degrees F or preheat your grill on a hot summer day.

Remove the skin from your salmon with a fillet knife.

Place skinned salmon in a single layer on two pieces of lightly greased aluminum foil. Make sure the aluminum foil pieces are big enough to fold over the salmon to make a packet.

Lightly salt each salmon fillet and then drizzle honey over both fillets.

Place 5 lemon balm leaves and dill on top of each fillet.

Fold the foil over the salmon and pinch the edges closed to make a packet.

Place foil packets into the oven or on the grill. Cook for 20 minutes or until the salmon reaches an internal temperature of at least 145 degrees F.

Remove the packets from the oven or grill and serve immediately.

This honey dill lemon balm salmon is great served with some freshly baked sourdough bread, a fruit salad, and a side of home-canned green beans. You can even throw a few extra lemon balm leaves in some fresh salads as a side dish.

In the winter months, you can use dried lemon balm in this recipe.

Honey Dill Lemon Balm Salmon

This delicious lemon balm recipe is simple and quick. It is a great way to add subtle lemon flavor to healthy salmon. The addition of dill and honey creates a beautiful, healthy meal for your family.

Ingredients

  • 2 salmon fillets approx. 24 oz each
  • 1/2 teaspoon salt
  • 2 teaspoons honey
  • 10 lemon balm leaves
  • 1 tablespoon fresh dill, chopped

Instructions

  1. Remove skin from salmon fillets and place them skin side down on 2 pieces of lightly greased aluminum foil. Make the foil pieces large enough to fold up and around the salmon after it is prepared.
  2. Sprinkle salt evenly over both fillets.
  3. Drizzle honey over the salmon fillets.
  4. Place lemon balm leaves evenly over the top of both fillets.
  5. Sprinkle the chopped fresh dill on the top of both fillets.
  6. Fold up the sides of the foil around the salmon and fold the edges to seal the foil around the salmon fillets.
  7. Bake in a 400 degree oven for 20 minutes, or place on a hot grill for approximately 20 minutes. Salmon is done when it reaches an internal temperature of 145 degrees F.

Notes

  • This recipe works great with all types of salmon. Atlantic, sockeye, and freshly caught Chinook are all delicious!
